18 Apr Apple Cinnamon Protein Pancakes
I am super excited to share a brand new breakfast recipe! A friend of mine kept talking about how she eats these delightful pancakes for breakfast and I was always intrigued! So finally I asked her for her recipe. She credited a friend of hers for it, so I took the recipe and revamped it to make it my own! I have made these once a week for the past few weeks! I make them on the weekend as my friend suggested and then reheat them each morning for 20-30 seconds in the microwave and they are still delicious — moist and not dry! A perfect quick breakfast!
This morning, I even braved no pure maple syrup and they were STILL delightful! I hope you enjoy! If you are following a clean eating plan or trying to keep your carbs low, this is a PERFECT recipe for you and an easy way to get in a protein! There is only 2 tbsp of oatmeal per pancake!
I make these in my Blend Tec blender but I am sure any blender would work!
Servings: 20 pancakes (approx 3.5″-4″ in diameter)
1 cup cottage cheese (I buy this at the local’s farmers market!)
1 cup of large flake oatmeal
1.5 scoops of Vanilla Shakeology (1 scoop is equivalent to 1/3 cup), or a protein powder of your choice. I would suggest using a reputable brand. I prefer Shakeology because it is low in sodium and has a variety of vitamins and nutrients just like a multivitamin would have and includes Super Foods like chia, flax etc!
2 tsp of ground cinnamon
90-180 grams of unsweetened apple sauce
Add all ingredients to your blender and blend until it becomes a batter consistency and without lumps. Heat frying pan or skillet on medium heat. Flip once one side looks golden. I use a coconut oil spray and spray the frying pan before adding the batter each time. I make 4 pancakes at a time.
To serve: microwave 1/2 cup of frozen blueberries for about 40-50 seconds and drizzle over the warm pancakes. Feel free to use any toppings of your choice!
